We are a non-profit long term care facility that offers independent living, assisted living, and skilled nursing care. Sharon Towers is currently seeking a full time Assistant Director of Culinary Services! In compliance with new federal requirements for Long Term Care, Proof of COVID-19 vaccination is required for all employees. Is responsible for supervision in the main dining room, fine dining, health care, bar/lounge and bistro/café concept, as well as for catering and special events. These areas will be operated within established objectives, standards, polices and procedures. Assists in the maintenance of sound inter-departmental relations and the integrating of the Culinary service department with the facility plan of operation. Management of staff within the framework of teamwork and empowerment. We are seeking someone who is: Detail-oriented - attention to the smallest details Team-oriented - cooperative and collaborative with all team members Leads by example - adhere to established company policies and procedures. Possess the ability to multi-task during busy times RESPONSABILITIES Embraces Sharon Towers philosophy, guiding principles and strategic objectives, utilizing these as the foundation for the execution of their job description. Assists in providing quality food and an enjoyable Culinary experience for residents, guests, and staff, eliminating food as an issue for Administration. Supervises all Dining Room personnel. Circulates in all dining areas, including health care, during meal periods to field resident/guest comments pertaining to service and food quality. Serve as point of contact to Executive Chef during the meal period. Supervises the scheduling of special functions and insures that these events are serviced correctly. Assists the management team in hiring, orienting, training, evaluating and counseling of Dining Room personnel in accordance with company policies. Promotes the professional growth and development of all staff. Participates in the development of the department's cycle menus. May assist in the predicting, planning, monitoring, evaluation of cost programs, daily purchasing, and maintenance of food preparation system, order book, recipe file, inventory, and storerooms, as assigned. Developing and pricing of special event, daily and wine menus. Responsible for managing labor costs within company parameters. Ensures day end closing. Reports to food committee. Maintains confidentiality of personnel issues/events as well as Sharon Towers policies, procedures and systems. Performs any other duties, as assigned. JOB TYPE Full Time 10:30AM-8:30PM Monday-Friday Weekend Rotation to include Saturday and Sunday EDUCATION and/or EXPERIENCE Bachelor's Degree in with a State approved major preferred, such Culinary Management, Hotel/Restaurant Management 3-5 years management experience providing direct supervision of up to 20 subordinates; preferably in a Dining Room setting It is required that the individual be a minimum of a Certified Dietary Manager or be a Registered Dietitian. If the employee is not a Certified Dietary Manager upon hire he/she will immediately enroll in an approved program. It is expected that the employee will complete the program within two years. ServSafe® Certification required within 6-months of hire. If not already ServSafe® certified, it is expected that the Dining Room Manager become certified within 5-months from acceptance of this position. Wine knowledge preferred. Experience in catering events and planning BEOs; including participating in committee planning, costing and execution. Prior customer service required. Experience in CCRC preferred. PHYSICAL DEMANDS Must be a minimum of 18 years of age and capable of lifting 35 pounds or more. Capable of sitting for extended periods of time, as well as standing and maneuvering independently and safely around kitchen, office, and storage areas. Capable of standing on concrete flooring for extended periods of time. Ability to see and hear, or to use prosthetics that will enable these senses to function adequately to assure that position requirements can be fully met. Sufficient manual dexterity to operate a fire extinguisher, manipulate kitchen equipment and operate all office equipment. Must be able to assist in the evacuation of residents.
